So it’s a bit strange alright that VW don’t have them available on EKTA. Maybe they only supply them primed and if you want gloss black you have to get them painted. This is correct, VW are cost cutting apparently and you are unable to order them as an individual part, they are only available primed ready to paint. Mirror caps for Transporters for example are available in black, white and silver. Various bumpers and other trims have been and are also available. They don't do every colour or premium colours obviously - metallic/pearls tend to need matching to the shade on the car anyway so wouldn't achieve anything. If you lower the mirrors to point to the ground it should leave a big enough gap at the top of the mirror to see the clips & use the tool supplied to push the clips down & pull off the other cap off.
